How to Make a Mumu

Ingredients: one 300 lb pig, 30 lbs root vegetable, 30 lbs greens, salt....
This video was taken our first weekend back in Papua New Guinea. Friends came to greet our nephews, Tony and Danny who were arriving from the US and to give a "house blessing" as is customary in PNG. The previous night was spent preparing vegetables and that morning a pig was dispatched and the parts were washed and readied for the mumu. In the 3 minute clip below you can see every step of mumu preparation. Once the mumu is covered up it's just a few short hours till the feast. The combination of leaves added to the mumu and the water that is poured in through the bamboo shoots cause the mumu to have a really nice flavor that is comparable to....I don't know. It's distinctly "mumu"! We plan to have another over Christmas time as it's the perfect way to celebrate together with a large group of friends.
